June is the season for fresh ume, green plums, in Japan.
I always want to try home-made ume syrup so I did it this year.
It wasn't that difficult to make it as long as you follow a recipe and it tastes so good and refreshing. I will definitely make it next year as well!
Here is my recipe for my very first ume syrup.
<ingredients> Fresh green plums 1kg Honey 250g Sugar (any kind) 500g Apple cider vinegar 500ml
1. Wash the plums in water and put under water for two hours. (To remove bitterness) 2. Drain well, dry with paper towels and remove stems by a toothpick. 3. Sanitise a glass jar with boiling water or alcohol 4. Layer plums, sugar and honey until they fill up in a jar. Pour apple cider vinegar at last. 5. Keep the jar in a cool and dark place for three weeks. (Shake the jar at least once a day)
